Having trouble getting the mudguard gaskets to meet the side/lower horncast gaskets. The rubbers are scootopia and just wondering if I need to make the holes in the mudguard gaskets larger to get them to move a bit more? Anyone had any experience of this?

I cant see any reason why not, after all the rubber gaskets are trapped by the mudguard and the holes cant be seen.

It's fairly normal to trim bodywork rubbers so they fit correctly.
