Brakes locking up.

I did take a look at the jets. They are all the stock jets from what I gather. I am trying to adjust the air/fuel mix. I think I understand turning the needle until I get a higher RPM. I have checked the plug and I am getting a nice brown look. However when starting in first gear it sputters some until shifting to the other gears. Maybe this is normal? I don't think I have the ear to really hear how it should sound while adjusting the mix. Maybe some advice from you pros.

I am waiting for the 195 kit. When I get into the head I will see what con rod is there. I was advised to just change the head first and try that before going to a larger carb and different muffler. Any thoughts on this?
