Another option would be hydraulic front and rear brake linked to operate as one from a master cylinder operated by the rear brake pedal. Then there's just the throttle to sort which could be left foot (tricky to use in my opinion) or by thumb on either left or right bar.

In 1986 my left upper arm was temporarily paralysed for about 6 months following an argument between my 150 super and a lada (doesn't get any less cool than that). I could ride perfectly fine as my hand was ok. Only a problem if I took my left hand off the bars when riding as i had to stop ( not fun without a clutch) and lift it back with my right!

quite funny but my point is that it's easy to ride once you've got a system that works for you.
