does anyone sell longer fork link bolts. I want to use washers to stop my paint getting damaged but theres not enough thread left. or can someone tell me how long the shaft and thread is supposed to be as the ones I have now might be short

If you use plain washers under the star washers then the star washers will have no effect.
Therefore, you could just leave them out.
However, your links will fall out and you will die a horrible death under the wheels of a juggernaut.
