I don't believe there is a correct set up particularly for the toe-in. I have just put a new suspension unit on my Bambini so I set it to what the old one was around 19mm but it pulled a little to the nearside so I eventually finished up with 30mm which I thought a lot but it rides well now. To measure the tow-in I use a 2mt length of heavy angle iron which is pressed against the front and rear wheel of the scooter, this is raised on to bricks to get the flat side of the iron against as much tyre as possible. The a similar length against the sidecar again on bricks. Then measure the gap between to two pieces of metal at the front and back wheels. I would start at a difference of around 20mm and test it, if it pulls to the nearside increase the difference until it doesn't and if it pulls to the centre of the road reduce the difference. You need a flatish road with no noticeable camber and at a steady speed, the sidecar will tend to pull to one side or the other when accelerating or braking. The sidecar wheel needs to be adjusted up or down so that the sidecar is level. The scooter should lean outwards a little when you are sat on it, sorry to be vague but it is not easy to be precise because I never know where you can accurately measure this. On a motorcycle with bigger tyres you can use a the wheels to work out the angle of lean. I have attached a webpage you may find useful and feel free to get back to me.
