I've been seeing some pretty crazy temps, but I've now sussed the happy areas and using it to set the jetting.
As an experiment I ordered a 2nd sensor and used Scotty's method of fixing to the top of the spark plug. I saw much, much lower temps when using this method. It really does depend on where the sensor is fitted.
