It does sound a little flat like the throttle response is slightly laggy but then you haven't got any kind of filter on the carb so its not going to give you a normal response anyway. The engine is drawing far too much air too quickly and the needle slide is rising too fast which is probably over enriching the mixture .
just as an experiment try partially covering the venturi to varying degrees whilst giving it some wellie on the throttle . You might find the throttle response picks up better which would indicate you need to restrict the air flow.
Have you tried running it at high speed for a few miles then cutting the engine dead ? reading the spark plug will give you a good idea of whether the engine is running too rich at WOT
