My Li s is all original, trying to keep it that way as much as possible. The cables are pretty worn. Am I going to have to remove the leg shield and other parts to replace them? Would I be able to just replace inner ones only? Still has the grease fittings on the cables. Is there a special grease gun for those, mine doesn't seem to fit.

You will find easier to fit a full set of cable with the leg shields off but if the cables are still good and you want to retain the oilers then just fit inner wires, no need to remove the leg shields. You need a 'pom pom' type grease/oil gun to lubricate the cables and use oil not grease. Oil penetrates and lubricates better.
