The machine is designed to run a 6Volt electrical system. 2 x 6V batteries does not give you 12V - think of it, rather as giving greater resilience of the 6V supply (the cold cranking power).
You may find a single, modern battery with greater cold-cranking output than yours but check the power output of the individual 6V batteries you have and that is the number to multiply by 2, to determine the required battery power output.
If you want to convert to a 12V system, then that is an entirely different matter. I am just completing a rebuild of my 150 Ld b MkIII with the Ducati Stratos 12V magneto conversion kit for Lambrettas, which has a six coil stator and electronic ignition.
If you were to go down that route for an avv machine, you would still need to know the required cranking power for the self starter but then source the a 12V battery / batteries with that power output.
