Is a cylinder head that came with a kit which had a 30mm crown height piston ok to use with a piston with a 39mm crown height? Lammer205

Should be, but check the profile of the piston crown to the head and confirm the squish setting.

You should also check the final compression ratio.

If is a purpose made lam piston ie racetour/bgm, af wosner etc then yes as they use the same crown profile as traditional lam, but it jap you will have to rework the head profile. I had to on my yam it 175 in a ts1 and in a malossi 172 with a suzuki ts185 in a vespa.
And as said always check the squish.
