Well, managed to find a couple of hours to get to get the fiddliest job left sorted - bleeding the hydraulic brake.
I invested in a new longer hose to follow the line of the speedo cable as this makes it easier to drop the wheel with the hose still attached. I have found this helps when bleeding the brake. Keeping the caliper on its side appears to leave an airlock in there whereas placing it on its back, like in the photos below, stops this. You'll also see I go for the swaged type banjos so there's no chance of them coming off (this happened to me once and was a bit scary).
You'll also see I take the lever off and pump the master cylinder with a pencil (a tip I got of this forum a few years back). It allows you to pump the piston all the way (the lever doesn't do this) and get rid of all the air bubbles. That said, it still took me a good 45 minutes to get the brake sorted. Sometimes they work almost straight away, sometimes not.
Anyway, just thought I'd share this in case it helps anyone.
