Well done! I know what you mean, it takes over your life.
From my cycling background I'd always thought of getting a pannier rack fabricated to fit in behind the leg shields, a bit like a spare wheel holder. You could then mount any of the vast array of waterproof cycling panniers, some of which are quite large.

How do you secure the bag? Do you have to grip it like hell with your legs?

No, the flaps that fold onto the forward edge of the side panels are magnetic. These hold the bag in place securely.
